Ingredients:

  1. 2 leeks
  2. 2-3 carrots, peeled and sliced
  3. 2-3 sticks celery sticks, sliced
  4. 2 cups (500 ml) green beans, chopped
  5. 1 cup (250 ml) cooked quinoa
  6. 6 cups (1.5L) homemade bone broth
  7. Sea salt

Directions:

Cut the ends off the leeks, quarter them lengthways, wash them under running water and cut them into 1cm slices. Place in a large pot and add carrots, celery and bone broth. Stir well and bring to a boil. Reduce heat and simmer for 10 minutes with the lid on. Season with sea salt and serve.
